At this moment, we know very little about what to expect from Android 2.3 (or 3.0) Gingerbread, but one thing which has been leaked today shows that it may be getting a looks change (although perhaps not as extreme as Microsoft with the Xbox 360 dashboard) with cleaner menus. The images are thanks to the latest Google Maps 4.60 update which came out last week.
The looks change in menus has been discovered thanks to someone looking into the code of the newest Google Maps version in a part which shows what menus to display. For Android 2.2 Froyo, the menu is set as level 8, but the code also contains a level 9 menu which has yet to be used. The one who did the code searching canadiancow, managed to switch the two menus on their device which shows us what the new version may look like (old version: left, and new version: right shown below).
It doesn’t look like a huge change, but it looks like we will be getting some more spaced-out and brighter menus on the next Android version. Whether this will stay consistent with the rest of the design for Gingerbread isn’t certain, but it is more than likely. This is hopefully just a small part of what the next Android version will have to offer, and we’re sure to get more details on the OS as they are announced (or leaked of course).

it looks no different to how its always looked, the one on the left just looked like its OEM skinned, the right one looks the same as it does on my Desire HD
